Chicken Jambalaya
A slightly spicy dish to mix thing up, this dish is popular across the South of America and would make a great addition to your repertoire.
Ingredients (serves 2)
70g of chorizo, 110g of sliced chicken breast, 1/2 a mug of rice, 1/2 a chopped red onion, 1/2 red pepper, 1 tsp of Cajun spice, 200g of chopped tomatoes, 300ml of water
How to make it
- Cook the chorizo on a low heat, then add the onion and cook for 5-6 minutes.
- Add the chicken and pepper, and cook until the chicken is browned.
- Add all of the remaining ingredients, including the water, cover the pan and cook for 15 minutes.
