Brunch Burrito

This is a great option if you want something substantial and you might have missed breakfast, but can’t wait until lunch!

Ingredients (serves 2)

1 small red onion, 1/2 a pepper sliced, 1 tsp of balsamic vinegar, pinch of paprika, 25g of butter, 3 eggs, 2 wraps, salsa, sour cream

How to make it

  • Saute the onion and pepper in a frying pan, add the vinegar and paprika and cook for 1 minute.
  • Scramble the eggs
  • Season the eggs with salt and pepper.
  • Warm the wraps, and divide the onion mixture and eggs between them.
  • Add salsa and sour cream to your preference
