Cod with Red Pepper
Why not try something slightly different that a deep fried cod? This is a lovely dish!
Ingredients (serves 2)
1 pepper, 1 large red onion, a clove of garlic, tin of chopped tomatoes, 100ml of vegetable stock, 10g of butter, 2 cod fillets
How to make it
- Pre heat the oven to 200C, and bake the red pepper. Remove from the oven once baked, cool and remove the skin.
- Chop the pepper up.
- Saute the onion in a frying pan and add the garlic (chopped). Add the tin of tomatoes and cook for around 3 minutes. Add the vegetable stock and cook for a further 3 minutes.
- Blend the mixture, then return to the pan and whisk the butter in.
- Season the fish to taste, sear in pan for a couple of minutes. Add the fish to the mixture and poach for a further 6-8 minutes – when it is cooked the fish will flake slightly at the touch.
