Quinoa Salad

An easy salad to make which includes the new superfood that is on the top of everyones list, quinoa.

Ingredients (serves 2)

180g of quinoa, 450ml of vegetable stock, 5 spring onions, 100g of honey roasted cashews, 2 tbsp of olive oil, a splash of lemon juice

How to make it

  • Cook the quinoa and stock in a saucepan together, once you have brought the pan to the boil simmer until all the liquid has been absorbed.
  • Spread the quinoa on a plate, allow to cool, and then add to your salad bowl.
  • Chop up the spring onions, and add to the bowl, alongside all of the other ingredients.
  • Season with salt and pepper to your taste, chill and serve.
