Salmon Salad
This is a really light, easy to cook salad which would be a great meal to eat on a summers day (or when you want to remember summer!)
Ingredients (serves 4)
300g salmon, a knob of butter, 1.5 cups of easy cook rice (or a microwave bag), 200g of frozen peas, 1 pepper, sliced cucumber, parsley, dill, chives (all herbs to your preference), 3 tbsp of white wine vinegar, a dollop of honey
How to make it
- Pre heat the oven to 180C
- On a baking tray place the salmon in some foil with the butter on top. Fold the foil over to the salmon is wrapped. Cook for 15 minutes. Leave to cool.
- Cook the rice, if boiling, add the peas 2 or 3 minutes before the rice is cooked. Drain.
- Place all of the other ingredients in a bowl and add the rice. Flake in the salmon and the juices. Chill before serving.
